The Cebo Iberico loin 50% Iberico Breed Luis Domingo, combines the quality of the raw material with which it is produced with a family formula for the marinade that is more than four decades old. A very special recipe that delights with its smoothness and nuances. In addition, the rich marbling of our pork loin emphasises the richness of the Iberian origin of our pigs.

PRODUCT DETAILS

50% IBERICO BREED IBERICO CEBO LOIN (GRAIN FED)

Weight: 1,100 to 1,300 kg

Curing time: + 120 days

Preparation: Product made from the ileus spinalis muscle of the Iberian pig, partially free of external fat, from the cutting of Iberian pig carcasses. The product is marinated with our traditional formula and stuffed into natural or artificial casings. It then undergoes a slow curing process (maturation) to give the product typical organoleptic characteristics.

Organoleptic characteristics:
Colour: Red and white, with a particular orange hue that comes from our marinade.
Flavour and aroma: Cured sausage with a characteristic aroma and a tender, richly nuanced flavour.
Texture: Compact, homogeneous, consistent and with a special shine. Veined when cut, showing the quality of the loin
