IBERICO PRESA STEAK
Oval-shaped muscle found on the inner side of the shoulder blades and is therefore exercised extensively.
Organoleptic characteristics:
Strong red colour with abundant fat infiltration (marbling). Intense flavour. Juicy texture.
Gastronomic uses:
Can be cooked whole or filleted. Its juiciness makes it ideal for roasting or for stews and casseroles. Its intense flavour stands out on the barbecue, grill or grilled.
