The Iberico Presa (prey), also known in Guijuelo as Bola, is pink to bright red in appearance with abundant fat infiltrations.

It results in juicy and abundant tender cuts, honeyed on the palate and full of flavour. Its soft texture makes it ideal for frying or grilling.

IBERICO PRESA STEAK

Oval-shaped muscle found on the inner side of the shoulder blades and is therefore exercised extensively.

Organoleptic characteristics:
Strong red colour with abundant fat infiltration (marbling). Intense flavour. Juicy texture.

Gastronomic uses:
Can be cooked whole or filleted. Its juiciness makes it ideal for roasting or for stews and casseroles. Its intense flavour stands out on the barbecue, grill or grilled.
