IBERICO PLUMA STEAK (Feather)

Small part of the pig that is located next to the back, near the forelegs. It is easy to recognise by its peculiar triangular shape.

Organoleptic characteristics Soft pink colour with an ideal balance between meat and fat that makes it delicious. Delicate flavour. Consistent and compact texture.

Culinary uses: Can be cooked whole or filleted. It is perfect for grilling or for inclusion in rice dishes. It is considered one of the finest and most elegant meats because of its magnificent texture.
