Iberico Tenderloin
The Iberico Sirloin is the noble fresh cut par excellence. Its consistency is smooth and not at all fibrous, but its flavour offers us the whole range of nuances of Iberian meats. It can be cooked whole baked or, when opened in half grilled, or cut into tournedó-style portions. Every day it is also more popular its use raw as part of the Iberian steak tartare, a delicacy with deep and balanced flavours.

IBERICO TENDERLOIN
Muscle located at the rear of the Iberian pig, close to the backbone. It is the most demanded piece due to its low level of fat.
Organoleptic characteristics
Dark red colour with hardly any veining and good size. Delicate and mild flavour. Texture without caking and firm to the touch.
Gastronomic uses:
It is perfect for cooking as grilled medallions, baked or in stew form. In this way, you will be able to savour its fantastic texture and unique juiciness.
